Matcha strawberry red bean Mochi 💚🍓💚 . Recipe makes 12 Red bean paste 1 cup red bean, soaked overnight 3 cups water 1/4 cup vegan sugar . Matcha Mochi 1 1/2 cups glutinous rice flour 1/4 cup vegan sugar 2 tsp matcha powder 1 cup water 1/3 cup cornstarch . 12 fresh strawberries . Drain soaked red beans, add water in a pot along with the beans. Cook beans until soft. About 1 hour. Smash beans with a spatula. Add in sugar and heat over low to cook off extra water until form a paste texture. Keep stirring during the process. Transfer beans paste to a food processor and process until smooth. Wrap with plastic wrap and keep in the fridge for 2 hours before using. . Combine the rice flour, matcha powder, sugar in a microwave safe mixing bowl. Whisk it well. Add in water and mix until combined. . .
Put the bowl into a microwave, heat it up for 1 minute. Take the bowl out and stir the mixture around with a heatproof spatula. Back into the microwave and heat it up for 1 min. Remove the bowl from the microwave. Keep stirring with the heatproof spatula, until it thickens and comes together into one smooth. . . Lightly flour work surface with cornstarch. Put the mochi on top (Put some starch on your hands to prevent sticking) Cut the mochi into 12 pieces. Flatten the mochi into a circle. (Feel free to use more corn flour if needed) . . Wrap the strawberries with red bean. Put some starch on hands. Now that the hubby and I are reunited, he’s been enjoying a lot of home cooked meals. Made him some chipotle chili chickpeas tossed together with poblano peppers, adobo flavored rice, broccoli and guacamole. 💛 . Chipotle Chili Chickpeas 1 can of chickpeas, rinsed and drained 1 tsp chipotle pepper flakes 1/2 tsp garlic 1/2 tsp onion powder 1 poblano pepper, cut into strips 1 cup mushrooms, quartered 1/2 tsp cumin 1/4 tsp coriander  1/4 tsp turmeric 1 tbsp soy sauce 1/4 cup water 💧 . Add mushrooms to a pan and sauté until mushrooms have softened and slightly browned. Add chickpeas and all seasonings to the mix. Stir to combine and allow to cook until fragrant, 2-3 minutes. Add soy sauce and water and stir to combine. Bring to a simmer and allow liquid to cook off slowly, about 5-8 minutes. Thank you so much everyone for all your lovely comments and messages on my progress picture ❤️ . . I have had loads of messages asking how I have stayed motivated over the last 8 weeks and honestly motivation is something I usually struggle with. Over the last 8 weeks I have had a lot going on, which usually would have led to me comfort eating. Iv went through a breakup, had uni assignments, my daughters dad has been away so iv had less help than usual and well being a single parent is difficult at the best of times😂 and that’s just to name a few of the stressful things going on in last few months. All of these things could have made me revert back to my normal ways of comfort eating but I think because I haven’t felt restricted with my calories I haven’t felt the need too. Don’t get me wrong I know everyone goes through shit and stressful times and sometimes eating well/exercising is just down the list of priorities but for me this time round iv just found it a lot easier to stick with, regardless of what else has been going on in my life. I have had takeaways etc in the last 8 weeks too but I have tracked them and then adjusted my calories over the rest of the week accordingly! Most of the time though I do cook healthy meals and people always ask where I find the time but cooking is something I enjoy so I just make time for it, and sometimes that involves cooking with a 2 and a half year old hanging off my leg 🤣 . . I think another reason iv stuck with it is because I have been really enjoying my training sessions with @conorbfit. Usually when I went to the gym I would do classes or cardio cause I didn’t feel comfortable enough to do strength training on my own. When your actually enjoying what your doing in the gym it def really helps ☺️ . . So basically iv been motivated because I haven’t felt restricted, iv been enjoying the training and because iv seen changes in my body so quickly that keeps me going 🙌🏼 there is always going to be other things going on in life and I could think of excuses every week but I think when you really want to make a change you will find the motivation from somewhere, even on the days when you really can’t be bothered 😂

If you’re well-informed about the science of energy balance, this may seem like a no-brainer 🧠... ⠀ But it’s little things, like unknowingly consuming lots of liquid calories, that I see sabotaging dieters left and right. ⠀ Mostly because it's not always obvious... ⠀ You see, there are loads of liquid calories that can easily sneak their way into your diet undetected. ⠀ Things like coffee creamers, flavored waters (some brands have calorie and calorie-free versions that look identical!), teas, green juices, etc. ⠀ So if you're struggling to lose weight despite making healthier food choices, one of the first things I'd do is ensure you're not taking in too many sneaky calories from liquids 💦❌ ⠀ If you discover that you are, either eliminate them or at the very least, account for ‘em in your daily food log 📝 ⠀ Personally, I think drinking calories while dieting is silly. ⠀ Sure, the occasional protein shake or smoothie is a nice convenience. Calories and Macronutrients. Finally going to attempt a few non-training posts while I’m in a brief limbo with the gym. So calories are the unit we use to measure the energy out body uses and what food can provide, as oppose to working with k(Joules) which would mean working with some more awkward and bigger numbers. Macronutrients are what foods are made up of proteins, carbohydrates and fats, which each have caloric values. Proteins and Carbs both providing 4 calories per gram, while fats provide 9 calories per gram - possibly why people perceive these badly, eating a higher proportion of fats in your diet can lead to calorie surplus easier. Proteins are made up of amino acids (AAs), which come together in a big chain and are broken back down into AAs, which are used for muscle building and repair, in this fitness context, proteins rich foods are mainly meats and fish, while proteins are found in a lot of different foods, such as grains, it would take eating a lot of them to get your optimal amount. Carbohydrates are found primarily from grains and are the macro used for energy, different carbs provide energy over different periods, we’ll discuss this later on. Carbs aren’t the enemy they’re made out to be, but with the right balance of macros, they’ll be your friend in helping you maintain or build muscle (Carbs > Energy > Performance, no performance impairment = no muscle loss, performance increase = muscle gain *subject to variables*). Fats are found in meats and fish a lot as well, depending on the cut how the ratio of fat:protein is. Fats are good and very necessary for your health, mainly hormonal function, they also provide a lot of energy, with a different mechanism to how carbs give energy (I think). Fats are broken down into saturated and unsaturated types, each down to their chemical bonding. Saturated fats are necessary for good cardiovascular health, in moderation, just as unsaturated fats also are (sat fats raise cholesterol, unsat fats reduce cholesterol). Cholesterol also is not bad for you, again in moderation, as it’s necessary for good structure and support of blood vessels.
